I’m a lover of potatoes – there I said it, although I’ve drastically cut down I still love a good potato or chip when I get the chance and I never thought that a sweet potato would come close!

Sweet potatoes are definitely a healthier alternative and they’ve definitely grown on me! The only downside is that I always feel like they have something missing (maybe it’s because I don’t want to cheat on normal potatoes but still) So I decided to try and add a little pizazz to them to give them a fighting chance of me liking them before I gave up trying on them for good!

AND, it turns out I made sweet potatoes amazing – yes it sounds big headed – but I love them. The spices give it a little kick and something extra without being spicy and it really compliments the natural flavor! The boys loved them too and they have made a great accompaniment to many of our meals and with loads more health benefits than normal potatoes. Here’s my husband’s choice of meal with these sweet potato wedges:

Ingredients

*Serves 2*

200g Sweet Potatoes

1 Tablespoon Oil

1 Teaspoon Smoked Paprika

2 Teaspoons Dried Basil

1/2 Teaspoon Black Pepper

Method

1. Wash the potatoes, chop either end off and discard. Chop them into wedge type shapes (I opted for a bit of a mish-mash of shapes because I had a weirdly shaped potato!) Make sure to leave the skins on because they are delicious and add to the flavor!

2. Place in a large saucepan and bring to the boil. Cook for 2 minutes (or until they just start to soften – don’t boil them completely)

3. Drain them and allow them to cool for 5 mins and then place on a baking tray. Either place them on greaseproof paper or on a non-stick pan (I was debuting a new pan so I didn’t need the paper)

4. Pre-heat the oven to 180 Degrees Brush the wedges with olive oil (I really do recommend brushing rather than drizzling because it helps the spice mix stick. )

5. In a separate bowl, mix together the paprika, basil and pepper – making sure that they are combined properly!

6. Sprinkle the spice mix evenly over the wedges and place in the center of the oven.

7. Cook for 15 minutes, shake the pan and then cook for a further 15 minutes.

8. Take out of the oven and serve!

  1. I was on a diet where I could have sweet potatoes [but not regular potatoes!], and it is always helpful to find new ways to season them! I loved making wedges and sweet potato fries.
